Peanut Butter and Buckwheat Energy Bites

About last week I was trying to study for an upcoming test and suddenly had this intense craving for something sweet, chocolaty and crunchy but healthy. I made my way to the kitchen and looked around but couldn’t quite find something that even remotely attracted me and instead, grabbed a bag of buckwheat, grinded it in a food processor and subsequently started adding a myriad of ingredients that were lying around and finally came up with these deliciously healthy energy bites. Buckwheat, which is a great substitute for grain in a ton of recipes, is actually a fruit seed related to rhubarb. It is an absolutely great source of magnesium which helps to relax the blood vessels that in turn, lowers blood pressure and improves blood flow. The nutrients in buckwheat also helps to lower cholesterol as well as the blood sugar levels in the body which in turn make it a super popular replacement for gluten intolerant people.

Ingredients

  • 1 cup buckwheat
  • 1/2 cup almonds or cashews
  • 3/4 cup rolled oats
  • 1/2 cup coconut
  • 1/4 cup chia seeds
  • 1/2 cup peanut butter
  • about 10 medooj dates (or any other dates soaked in hot water)
  • 1 tsp vanilla essence
  • 1 tbsp cocoa powder

Grind the buckwheat and almonds in a food processor to break them down a bit. Add the rest of the ingredients and mix until everything is incorporated. Add more peanut butter or dates if the mixture is not sticky enough.

Roll into balls and refrigerate. If the mixture is too sticky then roll the balls into coconut or even some cocoa powder.

Note: You can add just about anything else you want (such as matcha powder, choc chips, vanilla protein powder etc) and play around with the measurements as much as you want.
