While I always grew up in a home that had multiple jars of pickles in the fridge, it is only recently that I experimented with my version. This easy vegetable pickle is a great way to use up any veggie scraps you might have in the fridge and makes for a wonderfully thoughtful gift. <\/p>\n\n\n\n<!--more-->\n\n\n\n<p>While the recipe calls for specific vegetables, I used what I had on hand. You can add in a variety of other crunchy vegetables like green peppers, carrots (big and baby carrots) and even tiny pickling onions. <\/p>\n\n\n\n<div class=\"wp-block-ryelle-recipe\">\n<h2 class=\"wp-block-heading\">Easy vegetable pickle <\/h2>\n\n\n\n<div class=\"wp-block-ryelle-recipe-meta rmb-recipe__meta-list\"><div class=\"rmb-recipe__meta-item rmb-recipe__meta-item-serving\"><span class=\"rmb-recipe__meta-item-label\">Serving Size:<\/span><div class=\"rmb-recipe__meta-item-value\">Makes 4 x 250 ml jars<\/div><\/div><div class=\"rmb-recipe__meta-item rmb-recipe__meta-item-time\"><span class=\"rmb-recipe__meta-item-label\">Time:<\/span><div class=\"rmb-recipe__meta-item-value\">30 minutes<\/div><\/div><div class=\"rmb-recipe__meta-item rmb-recipe__meta-item-difficulty\"><span class=\"rmb-recipe__meta-item-label\">Difficulty:<\/span><div class=\"rmb-recipe__meta-item-value\">Easy<\/div><\/div><\/div>\n\n\n\n<div class=\"wp-block-ryelle-recipe-ingredients rmb-recipe-block__ingredients\">\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n<ul><li>1 cup apple cider vinegar <\/li><li>2 1\/2 cups water<\/li><li>2 tbsp sugar <\/li><li>1 tsp salt<\/li><li>1\/2 head cauliflower, broken into florets<\/li><li>1 red pepper, chopped into bite sized pieces<\/li><li>3 small red onions, chopped into bite sized pieces<\/li><li>2 small apples, chopped into bite sized pieces<\/li><li>10 cloves garlic <\/li><li>6 green chillies, 4 whole and 2 sliced down the middle <\/li><li> 1 tbsp mustard seeds <\/li><li>8 bay leaves<\/li><\/ul><\/div>\n\n\n\n<div class=\"wp-block-ryelle-recipe-directions rmb-recipe-block__directions\">\n<h3 class=\"wp-block-heading\">Directions<\/h3>\n<ol><li>Bring the vinegar, water, sugar and salt to a simmer and let cool.<\/li><li>Divide the vegetables between 4 clean and sterilized jars.
