Crunchy Oats and Peanut Butter Cookies

Hey guys, just thought I would share a quick recipe of one the of the biscuits we made for Eid tomorrow! Its really yummy, easy to make and takes only 15 minutes in the oven!

You will need:

  • 60 ml peanut butter
  • 60 ml soft butter
  • 180 ml sugar
  • 3 eggs, beaten
  • 45 ml milk
  • 500 ml oats
  • 250 ml wholewheat flour
  • 2.5 ml bicarb
  • 125 ml raisins (we used dates)
  • 7.5 ml ground cinnamon or mixed spice

Method:

Preheat the oven to 180 C and line a tray with baking paper.

Beat the peanut butter and butter until well blended. Add the sugar and mix well. Beat in the eggs and stir in the milk.

Add the dry ingredients and let the mixture stand for a few minutes. Make into small balls and press down with a fork.

Bake for 10-15 minutes until light golden brown and allow to cool.
