Maintaining a social life, boxing, blogging, working and studying full time while taking care of my diet has perhaps been one of the most challenging things I have ever done. Because I am constantly busy, I don’t always have the time to make something healthy every day and, since having to cut out as much gluten from my diet, thinking about what to eat has been causing more harm than good. Since being forced to be creative with my food choices, I have found myself making various kinds of health bowls and stir fry’s during the week which I can conveniently grab and get on with my day. The two I have been making the most however is a crunchy gluten-free goodness bowl & chicken quinoa stir-fry simply because they each take less than 30 minutes to throw together and you only have to wash one pot!
Since making the effort to cut out processed foods and sugars, I have been trying to come up with as many healthy treats as possible to keep me going when the 3pm slump hits. One of my absolutes favorites so far has been these amazing quinoa brownies. This has been the third time making them for the past month and I only just remembered to snap some images before eating the entire bunch. Packed full of healthy ingredients, these brownies will boost your energy, satisfy your sweet tooth and keep you full until supper-time comes around – plus, they could not be any easier to make!
Since I went (mostly) gluten free about two months ago, the one thing I found myself craving the most was bread. But, ever since I was told that bread or any gluten containing product act like glass in my stomach, I have been on a mission to find tummy friendly varieties that taste delicious and most importantly, doesn’t harm my stomach lining. Being on the Elimination diet for the past month has forced me to become creative when deciding what to eat on a daily basis. While I always knew that certain foods made me feel ill, I never really knew how to cut them out of my diet and more importantly, what I could replace them with. Too often, when trying to embark on a healthy lifestyle, we get so flustered by the vast amount of information out there that many people just decide to give up before even starting. Ever since I shared my post about how changing my diet helped to clear up my skin and subdue my fibromyalgia symptoms, I have getting a wealth of requests for ideas on what to cook and tips on which ingredients to buy. Due to this, I decided to share some of my favourite yet simple gluten free, sugar free and lactose free snacks, desserts and mains in collaboration with my favourite healthy local store, Organic Touch.
I recently had the pleasure of tasting the new La Belle Bistro and Bakery menu in Camps Bay just three days after it was rolled out to the public and quite simply put, it was the best damn thing ever. Everything from the minute details in décor to the wonderful staff makes the restaurant one of the most perfect places you could possibly imagine dining.
